Freshen up a slightly faded rosé
For finished wines, the use of chips allows you to add freshness to your rosés and stabilize profiles. The addition of correctly selected chips enhances the wine's acidity and youthfulness, bringing new vitality to a wine altered by a complex vintage or prolonged cellaring.
Our tips
Choose the Boisé Signature Premix FR made from our 2 flagship chips, combining volume and freshness. Dosage at 1- 1.2 g/l on finished wine, with a minimum aging period of 2 months.
Make your rosés stand out with complexity and elegance
Controlled aging in stainless steel tanks, combined with top-of-the-range Boisé® staves, is a practice that combines control and precision. O2 intake is limited, preserving the freshness of rosés. The staves add subtle notes of elegance and complexity. Each stave has its own specific aromatic profile. Boisé® staves undergo rigorous aromatic selection before being assigned to specific toasting profiles.
The result is a precise, repeatable aging process, with a "house" signature that's unmistakable from one year to the next.
As a result, your rosés move upmarket and stand out from the crowd.
Team tips
For a rosé to be ready early in the year
7mm staves are suitable for aging up to 4 months.
Opt for #7.VO or #7.FR at a dose of 1.5 staves/hl on finished wine to gain balance and amplitude on the palate, while enhancing the wine's freshness.
For greater complexity, combine the two references.
For spring bottling
The 20mm staves are suitable for aging between 6 and 8 months and bring a new dimension to the wine.
Stave #20.VO, used at doses of around 0.5d/hl, enhances the rosé's fruitiness and envelops the palate. Add a touch of sweetness by using #20.3 at doses equivalent to 0.2d/hl.
Stave #20.FR adds freshness at 0.5d/hl. For a mineral and oaky profile, complete with 0.25d/hl of #20.1 and 0.15d/hl of #20.HD.
