Optimising the extraction stage for white musts

A major player in the market for aromatic white wines faced systematic loss of value on its products with a high polyphenolic content. For some grape varieties, polyphenols can lead to bitter, astringent wines, or premature oxidation, which can bring about a slowdown in sales. To meet the company’s quality objectives, Vivelys investigated the areas for improvement at every stage (reception, pressing, and pre-fermentation), and then implemented a new procedure to increase juice quality.

The implementation of monitoring tools at the pressing stage enabled producers to better understand the phenomena occurring in this phase and streamline technical decisions. New winery technology (processing of musts rich in polyphenols with oxygen) was integrated, with support during operational changes.
